材料:
English (Braised Duck's Webs and Mushrooms with Cabbage):
8 fried duck’s webs (鴨掌) 4 cloves garlic (蒜頭)
2 star anise (八角) ½ piece dried tangerine peel, soaked (陳皮)
1 tael dried black mushrooms, soaked (北菇) 4 slices ginger (薑片)
¼ onion (洋葱) 12 taels cabbage (紹菜)
Indoensia (MASAKAN KAKI BEBEK DAN JAMUR DENGAN KUBIS PANJANG):
8 buah kaki bebek yang telah digoreng 4 biji bawang putih
2 biji bunga lawang 1/2 potong kulit jeruk kering(direndam air)
4 iris jahe 1/4 bawang bombay
1 pon kubis panjang
調味料:
English: Seasoning for Duck’s webs :
1 litre water (水) 2 teaspoons chicken powder (雞粉)
1 tablespoon wine (酒) pinch of pepper (胡椒粉)
Sauce:
600 ml water (水) 2 tablespoons oyster sauce (蠔油)
½ tablespoon sugar (糖) ½ teaspoon dark soya sauce (老抽)
Thickening:
1 tablespoon cornstarch (粟粉) 2 tablespoons water (水)
Seasoning for cabbage:
250 ml water (水) 1 teaspoon chicken powder (雞粉)
½ salt & sugar (鹽、糖)
Indoensia: Bumbu untuk kaki bebek:
1 liter air 2 sendok teh tepung ayam
1 sendok teh arak putih Sedikit tepung merica
Saus:
600 ml air 2 sendok makan saus tiram
1/2 sendok makan gula putih 1/2 sendok teh kecap hitam
Thickening:
1 tablespoon cornstarch (粟粉) 2 tablespoons water (水)
Seasoning for cabbage:
250 ml water (水) 1 teaspoon chicken powder (雞粉)
½ salt & sugar (鹽、糖)
作法:
English:
1. Trim the toe nails of the duck’s webs; blanch in boiling water with 1 teaspoon salt for 5 minutes; drain.
2. Crush the ginger and garlic; slice the onion and cut the cabbage.
3. Heat 1 tablespoon oil, fry the garlic and duck’s webs, add seasoning, star anise and tangerine peel. Cover and simmer for 20 minutes; drain.
4. Heat 1 tablespoon oil, fry 2 slices of ginger, onion and mushroom, add all ingredients for the sauce and cover. Simmer for 15 minutes.
5. Return the duck’s webs to the mushrooms and cook for a few more minutes. Thicken the sauce with cornstarch mixed with water.
6. Heat 1 tablespoon oil and fry the cabbage with ginger. Add seasoning, cover and cook until the cabbage is soft; drain and transfer to a serving plate. Arrange the mushrooms and duck’s webs over the cabbage with sauce. Serve hot.
Indonesia:
1. Potong kuku kaki bebek,rebus sebentar dalam air ditambah dengan 1 sendok teh garam.Tiriskan.
2. Hancurkan jahe dan bawang putih .Potong bawang Bombay dan kubis panjang.
3. Panaskan satu sendok minyak makan,goreng bawang putih dan kaki bebek,tambahin bumbu,bunga lawang dan kulit jeruk.Masak dengan sekitar 20 menit.Angkat.
4. Panaskan sedikit minyak ,masukkan irisan jahe,bawang Bombay dan jamur dan saus.tutup masak selama 15 menit.
5. Masukkan kaki bebek ke dalam masakan jamur,masak beberapa menit.Tambahi dengan air tepung jagung.
6. Panaskan minyak dan masak sayur kubis panjang.Tambahkan bumbu,masak sampai lembek.Angkat dan taruh di atas piring.Kemudian masakan kaki bebek ditaruh di atas sayur kubis.Hidangkan .
