COLD CUT SPICY SHIN OF BEEF  
 
材料:
English:
Gold Coin shin of beef 1 ¼ catties (800g)
Ginger 4 thick slices
Shaoxing wine(紹酒) 3 tbsp
Indonesia:
DAGING URAT SAPI 1¼ KATI (800g)
JAHE 4 IRIS TIPIS
ARAK SHAOXING 3 SDM
調味料:
English:
Water 6 cups
Light soya sauce 1 ¼ cups
Dark Soya sauce 1 ¼ cups
Rock sugar(冰糖) ¾ cups
Star anise (八角) 6-8
Tangerine peel (果皮) 1/3
Ginger 4 slices
Shaoxing wine 3 tbsp
Spicy sauce 3 tbsp
Sesame Oil ½ tsp
Indonesia:
AIR 6 GELAS
KECAP ASIN 1¼ GELAS
KECAP ASIN HITAM 1¼ GELAS
GULA BATU ¾ GELAS
BUNGA LAWANG 6-8
ASAM 1/3
JAHE 4 IRIS
ARAK SHAOXING 3 SDM
作法:
English:
1. Thaw shin of beef, rinse well
2. Bring half wok of water to the boil together with ginger and wine. Add shin of beef to boiling water and blanch for 5 minutes. Remove and rinse well.
3. In the meantime, bring spicy sauce to the boil, simmer for 15 minutes until well flavoured. Add shin of beef to the sauce, bring back to the boil and then simmer over medium heat for 50-60 minutes until tender.
4. Remover from sauce and leave to cool.
5. Slice thinly and arrange on a plate.
6. Sprinkle with a little spicy sauce and sesame oil to serve.

3. DALAM PADA ITU, REBUS SAUS PEDAS, DIDIHKAN SELAMA 15 MNT SAMPAI ADA RASA. MASUKAN DAGING URAT SAPI KEDALAM SAUS, REBUS LAGI SAMPAI MENDIDIH KIRA-2 50-60 MNT SAMPAI EMPUK.
4. KELUARKAN DARI SAUS DAN DINGINKAN
5. IRIS TIPIS DAN ATUR DALAM PIRING
6. TABURKAN DENGAN SAUS PEDAS DAN MINYAK WIJEN
Note:
- This dish can be served cold as a starter, or slightly warm as a main dish.
- ‘Gold Coin’ shin of beef is a special part of the shin that is more tender and
has a round shape that looks like ‘ gold coin’ after cooking.
