English (Vegetarian Supreme ):
bean curd sheet (腐皮) 1 piece
button mushrooms (蘑菇) 80 grams
bean curd roll (素雞) ½ piece
water chestnuts (馬蹄) 4 pieces
carrot (紅蘿蔔) 60 grams
ianjin cabbage (津菜) 100 grams
enoki mushrooms (金菇) ½ pack
snow fungus, soaked (雪耳) 10 grams
minced ginger (薑茸) ½ tablespoon
broccoli (西蘭花) 1
black moss, soaked (髮菜) 10 grams
ginger wine (薑汁酒) ½ tablespoon
Indonesia ( Masakan sayur tanpa daging ):
kulit tahu kering 1 lembar
jamur kancing(bulat) 80 grams
daging ayam tiruan 1/2 potong
“ma thai” 4 buah
wortel 60 gram
sawi putih panjang 100 gram
jamur ems 1/2 bungkus
jamur putih “sut yi” 10 gram
makan jahe cincang 1/2 sendok
brokoli 1
sayuran rambut(fat choi) 10 gram
makan jus jahe 1/2 sendok
調味料:
Sauce:
water 360 ml
salt ½ teaspoon
sugar 1 teaspoon
light soya sauce 1 teaspoon
dark soya sauce ½ tablespoon
oyster sauce 1½ tablespoon
pepper pinch
sesame oil dashes
Thickening:
cornstarch 2 tablespoons
water 3 tablespoons
Indonesia Saos:
air 360 ml
teh garam 1/2 sendok
teh garam 1 sendok
teh gula 1 sendok
makan kecap asin 1/2 sendok
makan kecap hitam 1/2 sendok
makan saos tiram 1,1/2 sendok
merica dan minyak wijen sedikit tepung
untuk pengental:
makan tepung jagung 2 sendok
makan air 3 sendok
作法:
English:
1. Split the bean curd sheet into 2 pieces, deep-fry in hot oil until crispy, remove and soak in water until soft. Drain well and place in a big bowl.
2. Cut the button mushrooms, bean curd roll, water chestnut, carrot and tianjin cabbage into thin slices; trim the enoki mushrooms and snow fungus, rinse well.
3. Blanch each ingredient in boiling water separately; drain.
4 Heat 2 tablespoons oil with ginger, add all ingredients and stir-fry. Add ⅓ of the sauce and cook for a while. Stir together the cornstarch and water and add to the sauce, cook until the sauce is thickened.
5 Place the filling in the centre of the bean curd sheet and wrap into a parcel. Steam over high heat for 5-10 minutes, remove and turn upside-down onto a big plate.
6 Trim the broccoli into small florets, parboil in boiling water with 1 tablespoon oil, 1 teaspoon salt and ½ teaspoon sugar. Drain and arrange around the parcel.
7. Heat 2 tablespoons oil and add the black moss. Stir-fry and sprinkle with ginger wine, add the sauce and thicken with cornstarch and water. Pour the sauce over the parcel and serve immediately.
Indonesia
1. Potong kulit tahu jadi dua,goreng sampai renyah,angkat dan rendam dalam air sampai lunak.angkat dan tiriskan ,taruh di atas mangkuk besar.
2. Potong /iris jamur kancing ,daging ayam tiruan,buah “ma thai”,wortel,sayur sawi putih,cuci bersih. Potong jamur emas dan jamur putih,Cuci bersih dan tiriskan.
3. Rebus sebentar dalam air panas secara terpisah.
4 Panaskan 2 sendok makan minyak,jahe dan masak semua bahan sayuran .Tmabahkan 1/3 saos dan masak sebentar.Campurkan tepung jagung dan air ke saos .Masak sampai kental.
5 Taruh bahan yang sudah masak ke atas kulit tahu dan bungkus.Stim selama 5-10- menit.Angkat dan taruh diatas piring besar dengan posisi terbalik.
6 Potong brokoli cuci dan rebus sebentar dalam air panas ,tambahkan 1 sendok teh minyak,garam dan 1.2 sendok teh gula.Angkat dan taruh di sekeliling piring yang berisi bungkusan sayur tadi.
7. Panaskan 2 sendok makan minyak dan masukkna sayur rambut”fat choi”Masak dan campurkan sedikit air jahe,tambahkan saos dan juga pengental dan air.Sesudah mendidih,tuangkan di atas bungkusan sayur.Hidangkan .
